Sausage, Apple, Celery Stuffing

Recipe: SAUSAGE, APPLE, CELERY STUFFING

Ingredients

  • 1 cup minced onion
  • 1 ½ cups chopped celery (stalks and leaves)
  • 2 large peeled, cored, and diced apples (your favorite variety)
  • 1 cup butter
  • 1 pound bulk pork sausage (I use Jimmy Dean Sage Pork Sausage)
  • 28 ounces chicken broth (I use Swanson)
  • 9 cups soft bread cubes or 1 package seasoned stuffing cubes
  • ½ teaspoon pepper
  • Crushed dried sage and thyme to taste
  • 1 cup dried cranberries, (optional)

Instructions

  1. In a large skillet melt butter. Add onion, celery, apples and sausage.
  2. Cook until vegetables are tender and sausage browned.
  3. Stir in about ½ of cubed bread or seasoned stuffing mix and combine all the ingredients together.
  4. Add the pepper, sage, and thyme.
  5. Put into a deep bowl.
  6. Pour in chicken broth. Add remaining bread or stuffing cubes and toss.
  7. I like moist stuffing. If you find the stuffing on the dry side you may add additional chicken broth or apple cider.
  8. If stuffing the turkey fill the cavity just before roasting.
  9. The stuffing may also be baked uncovered in a buttered casserole dish.
